Nature's Secret

Recipe Name: Masala Desi Pasta

Ingredients

  • 1 cup penne pasta, or any pasta
  • water to boil
  • ½ tsp salt
  • 1 tsp oil
  • 1 tsp butter
  • 2 clove garlic, finely chopped
  • 1 inch ginger, finely chopped
  • ½ onion, finely chopped
  • 1 cup tomato pulp
  • ¼ tsp turmeric / haldi
  • ½ tsp kashmiri red chilli powder
  • 2 tbsp tomato sauce
  • ½ tsp garam masala
  • ½ tsp salt
  • 2 tbsp corn
  • ¼ capsicum, finely chopped
  • ¼ carrot, finely chopped
  • 2 tbsp peas / matar
  • 7 florets broccoli
  • 3 tbsp water
  • ½ tsp mixed herbs, basil, marjoram, oregano, rosemary, sage, thyme

Step by Step Procedure

  • Step 01 : Saute 1 inch ginger and 2 clove garlic in 1 tsp oil and 1 tsp butter.
  • Step 02 : further saute ½ onion till they turn soft.
  • Step 03 : additionally add 1 cup tomato pulp and saute well.
  • Step 04 : keep stirring till the tomato pulp thickens.
  • Step 05 : now add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and ½ tsp salt.
  • Step 06 : saute till the spices gets cooked completely.
  • Step 07 : now add 2 tbsp corn, ¼ capsicum, ¼ carrot, 2 tbsp peas and 7 florets broccoli. saute for a minute.
  • Step 08 : add in 3 tbsp water and mix well.
  • Step 09 : cover and simmer for 5 minutes.
  • Step 10 : now add in 2 tbsp tomato sauce and ½ tsp mixed herbs. mix well.
  • Step 11 : add in cooked pasta and mix gently till the sauce gets coated well.

Serve masala pasta desi style hot topped with cheese if required!

Recipe Name: Traditional white Sause pasta

Ingredients

  • 2tablespoons butter
  • 1tablespoon whole wheat flour or 2 tablespoons all-purpose flour
  • 1cup chilled milk or 250 ml chilled milk
  • ¼teaspoon black pepper powder or add as required
  • generous pinch of nutmegor grated nutmeg
  • salt as required
  • 1cup penne pasta or 100 grams penne pasta
  • 4cups water
  • ¼teaspoon salt or add as required
  • ¼teaspoon dry oregano
  • ¼teaspoon dried basil
  • ¼teaspoon dried thyme or ¾ to 1 teaspoon mixed herbs
  • any herb of your choiceor some spring onion greens
  • vegetarian parmesan cheeseor grated cheddar cheese – add as required (optional)

Step by Step Procedure

  • Step 01 : Heat a saucepan. Keep the flame to a low and add 2 tablespoons butter. You can use salted or unsalted butter.
  • Step 02 : When the butter melts and starts to bubble, then add 1 tablespoon whole wheat flour or 2 tablespoons all-purpose flour.
  • Step 03 : Using a wired whisk stir the flour quickly as soon as you add it. Keep on stirring so that no lumps are formed. The frequent stirring helps the flour to cook evenly. You will see the flour frothing and bubbling up while stirring. Sauté the flour till you get a nice cooked aroma from the flour and a pale golden color. Don’t brown the flour.
  • Step 04 : Keep the flame to the lowest and then pour 1 cup chilled milk in a gentle stream. Pour the milk with one hand and stir the sauce mixture with the other. The milk has to be chilled, so that lumps are not formed. If you use hot or warm milk or milk at room temperature, lumps can be formed.
  • Step 05 : Do stir frequently while the milk warms and heats up.
  • Step 06 : On a low flame, simmer the sauce till it thickens.
  • Step 07 : When the sauce has thickened well and coats the back of a spoon, switch off the flame.
  • Step 08 : Keep the saucepan down and add the seasonings – ¼ teaspoon black pepper powder, a generous pinch of nutmeg powder or grated nutmeg and salt as required. For a cheese sauce, you can add 2 tablespoons of grated cheddar cheese
  • Step 09 : Mix very well and keep aside. Do note that on cooling white sauce will thicken more. So you can keep the consistency accordingly.
  • Step 10 : Boil 4 cups water with ½ teaspoon salt in a pan.
  • Step 11 : When the water comes to a boil, add 1 cup penne pasta.
  • Step 12 : Cook the pasta on a medium to high flame.
  • Step 13 : When the pasta gets done to an al dente texture, switch off the flame. For a softer texture, you can cook the pasta more if required.
  • Step 14 : With a strainer spoon, strain the pasta.
  • Step 15 : Then add them to the white sauce.
  • Step 16 : Add ¼ teaspoon each of dried oregano, dried basil and dried thyme. You can add your choice of herbs. At this step you can even add some steamed or cooked or sauteed or roasted veggies.
  • Step 17 : Mix very well.

Serve white sauce pasta garnished with some fresh herbs like parsley, chives or dill. You can also garnish with some grated cheddar cheese.
